Tivoli Hospitality Group has officially unveiled Omnia Convention by Tivoli during a grand launch event held at the property in Bhondsi–Badshahpur, Gurugram. The unveiling celebration brought together hospitality professionals, event planners, industry experts, and the crème of Delhi and NCR, offering everyone a preview of the group’s newest luxury Hotel.

Some meals don’t just satisfy your hunger — they leave an imprint on your memory. My evening at the Hyderabadi Rasoifestival at Hyatt Place Gurgaon Udyog Vihar (Nov 21–28) was one of those rare dining experiences that feel intimate, warm, and deeply personal.

The moment I entered the hotel’s inviting restaurant on Old Delhi–Gurgaon Road, the air was already buzzing with familiar aromas — the mellow smoke from slow-roasted meats, the comforting tartness of tamarind, and the subtle fragrance of spices blooming in ghee. At the centre of this culinary journey stood Dilnaz Baig, whose passion reflects not only in the flavours she creates but also in the way she brings stories and heritage to the table. Her cooking feels like a bridge between generations, where treasured recipes are treated with both respect and imagination.

I began with the Shikampuri Kebabs, soft enough to melt with the slightest nudge of a fork, each bite carrying a whisper of spices and a creamy centre. The Pathar ka Gosht was a standout — robust, smoky and beautifully charred, yet astonishingly tender. Even the vegetarian offering, Paneer 65, had a harmony of heat and tang that showcased a confident hand with spices.

The dish that truly stayed with me, though, was the Khatti Dal — Dilnaz’s signature creation. Tangy, soothing and surprisingly complex, it captured the spirit of Hyderabadi comfort cooking. There was an old-world charm in its simplicity, a sense of something quietly nurtured over time, influenced by Persian, Mughlai and Turkish culinary traditions.

The main course was a hearty parade of classics. The Hyderabadi Dum Biryani arrived fragrant and perfectly layered, while the Haleem was rich and velvety, the kind that demands unhurried appreciation. The Bagara Baingan and Mirchi ka Salan rounded off the spread with their distinct personalities — earthy, nutty, tangy and beautifully balanced. Dessert came in the form of Double ka Meetha, a warm, indulgent finish that echoed nostalgia.

Guests can choose between a Table d’Hôte lunch (1 pm–3 pm) or the expansive buffet dinner (8 pm–11 pm), both priced at ₹1749 per person (₹3498++ for two). But the true value of the experience lies not in the cost, but in the warmth, generosity and authenticity that come with every plate.

Jaisalmer rises out of the Thar Desert like a vision carved in gold. The soft yellow sandstone used to build its houses, havelis, and fort glows amber in the shifting desert light, giving the city its enduring title — the “Golden City of India.” For centuries, this oasis at the edge of the desert has been a cultural crossroads, where caravans once halted on trade routes and where art, architecture, and tradition flourished. Today, Jaisalmer continues to enchant travellers with its living heritage and desert landscapes that feel timeless.

At the heart of Jaisalmer stands the Jaisalmer Fort, a UNESCO World Heritage Site. Unlike many forts that exist only as museums, this one still hums with daily life. Within its ancient ramparts are winding lanes, centuries-old Jain temples, bustling shops, and homes that have been lived in for generations. Walking here feels less like stepping into the past and more like experiencing history that is still unfolding. From the ramparts, the desert stretches endlessly, reminding visitors how closely this city is tied to its surroundings.

Beyond the fort, the streets of Jaisalmer open to a world of intricately carved havelis. Patwon-ki-Haveli, with its fine latticework, and Nathmal-ki-Haveli, known for its unusual symmetry, are landmarks of the city’s famed stone craftsmanship. These buildings are not only architectural wonders but also symbols of the prosperity brought by trade in the medieval period. Nearby, the tranquil Gadisar Lake, once the city’s water source, offers a place to pause and watch the play of light on its ghats and temples.

No trip to Jaisalmer is complete without venturing into the desert itself. Just outside the city, the Sam Sand Dunes invite travellers to experience the vast silence of the Thar. As evening falls, camels tread across the dunes and folk performers bring the desert alive with song and dance under the starlit sky. The desert also reveals fragile ecosystems — glimpsed in the Desert National Park, where rare species like the Great Indian Bustard still survive.

Jaisalmer is not only about monuments and landscapes; it is also about how heritage is carried forward. Many of the city’s historic mansions and palaces have been adapted into hotels, offering visitors a chance to live within history.
